Sea Salt or Table Salt?

American Heart Association did a survey on 1,000 people nationwide about their thoughts on sodium and heart health. 61% believed that sea salt has lower sodium content than table salt.

This is probably because Sea salt is marketed as a health food and it's "natural" nature gave people the wrong impression.

In fact, sea salt and table salt are very similar chemically. They both contain the same amount of sodium chloride by weight, which means they contribute equally to total sodium consumption and have the same effect on blood pressure.

However, Sea salt is made from evaporated seawater, with less processing than Table salt which comes from underground. Therefore, Sea salt retains most of its minerals content, which some cooks say it has a better flavor.

事實上,海鹽和食鹽的化學構造非常相似。它們都含有相同重量的氯化鈉,這意味著海鹽和食鹽含有同等數量的鈉質,並且對血壓都有相同的影響。

然而,海鹽是由海水蒸發而成,又食鹽則來自地底下,所以海鹽比食鹽更少經過工業處理。因此,海鹽保留了大部分礦物質,正因如此,海鹽於烹調時能使食物具有風味。
